Safflower, Carthamus tinctorius, Natural Dye and Herb, Ground

Safflower is a herbaceous, thistle-like annual with brilliant yellow, orange or red flowers.
Historically Safflower was grown as a crop for its seeds, and used for coloring and flavoring foods, in medicines, and making red (carthamin) and yellow dyes. Vegetable oil is also extracted from its seeds.
Safflower flowers are sometimes sold as a cheaper substitute for saffron. It is therfore referred to as "bastard saffron."

Safflower is one of humanity's oldest crops. Garlands made from safflowers were found in the tomb of the pharaoh Tutankhamun.
